摘要:
了解蚕蛹营养成分的含量和质量,为新资源食品的开发提供依据。方法:采用常压干燥法(105 ℃)测定蚕蛹水分含量,索氏提取法测定蚕蛹脂肪含量,全自动凯氏定氮仪测定蚕蛹蛋白质含量,反相高效液相色谱法测定蚕蛹氨基酸含量,原子吸收分光光度法测定蚕蛹金属元素含量,动力学电位法测定蚕蛹磷的含量。用氨基酸评分(AAS)、化学评分(CS)和必需氨基酸指数(EAAI)评价氨基酸质量,与常见动物性食品营养成分进行对比分析。结果:缫丝后干蚕蛹中水分占总质量的11.28%,粗脂肪、粗蛋白各占其干重的20.77%和70.69%,14种氨基酸总含量为59.68 mg/100 g,8种必需氨基酸含量占氨基酸总量的49.65%,必需氨基酸与非必需氨基酸含量(NEAA)的比值为0.99,并含有丰富的牛磺酸(2.14 mg/100 g)。
Abstract:
To analyze and evaluate the nutrition composition of silkworm pupa,so as to provide evidence for developing new resource food.Methods:The water content of silkworm pupa was determined by normal pressure drying method(105 ℃).The amount of crude fat was determined by soxhlet method,and crude protein,by Kjeldahl apparatus. The contents of amino acids were determined by reversed phase highperformance liquid chromatography(RPHPLC), the metal element contents,by atomic absorption spectrophotometry,and the phosphorus content,by dynamic potentiometry. The quality of amino acids was evaluated by amino acids score(AAS), chemical score(CS) and essential amino acid index(EAAI),and then these results were compared with other most common animal foods.
